After the events of Star Wars Episode 6, the New Republic is formed and Luke Skywalker builds a Jedi Academy on the old Alliance world of Yavin 4. This is my concept of what the temple would look like in the upcoming Episode 7.
Here we have Jedi Master Luke with 2 other Jedi Masters sitting at council... They are being met by the Chief of State Mon Mothma, as well as General Han Solo, Senator Leia Solo, and other members of the Senate. There are also other Jedi making a hologram "call", and student pilots going over a flight plan with General Lando Calrissian. And last, off in the corner, is a small memorial with the helmet of Luke's father, Anakin/Darth Vader.
Recipe; I made the temple with cardboard pieces that were painted with greys, browns, and greens- then used various Star Wars bases throughout (under the pillars, around Vader's helmet, etc.) The table was from an Episode 2 Genosis playset that I cut some pieces off and added a little effect to, and Vader's helmet is from an Episode 3 Anakin-to-Vader playset. I hung some LED lights to the ceiling, and then added fake plants. The Star Wars figures aren't necessarily "customed", but I did give Luke a Mace Windu Jedi robe, put a cloth robe on the Jedi Master to the right of him, and gave Han Solo a General's cape.

I'm not docking you any stars for it or anything, but, design-wise, I doubt that Luke would choose to erect a memorial of his father based on his Darth Vader persona, rather, I think he would want to try to humanize him with a monument to Anakin Skywalker instead. Consider that the mere sight of Vader's helmet would likely inspire negative feelings in visitors to the Jedi Temple (not the least of which might be, "Is the son going to follow in his father's footsteps?"
